When an applicant provides their demographic information, we like to tell people, “U Can’t Touch This”, just like the old MC Hammer song. To put it another way, applicants can be whoever they want to be. Your job is to request the information and then report the information they give you whether you think it’s correct or not. If John Doe marks the box that he’s Asian and also writes in that he’s Martian, that is what you report. You don’t care, you don’t advise, you don’t touch it.
